Premium wines are expected to let nature operate with as little intervention of man as possible. This building looked for the right slopes nearby the terroirs in order to let gravity guide the vinification process. Actually gravity is the force that keeps all the pieces of the complex together. Primitive compositional principles are adequate when dealing with such old archaic programs like wine making where time should add to the quality of the whole.
